When Peru native Roy Rojas stepped off the cruise ship to start a new life in America, he knew he wanted to be a part of the restaurant industry. What he didn’t know? That he would become one of Capital Region’s most successful restauranteurs, with five eateries across New York’s Capital Region including Margarita City in Colonie and La Fiesta in Clifton Park. One of his most recent success stories? Las Margaritas Mexican Cantina, which opened in Latham in 2024.
