Cremini Mushroom Stroganoff With Filet Tips
Ingredients:
1/4 cup unsalted butter
2 garlic cloves
2 shallots
1 cup sherry
3 cups cremini mushrooms
1 Tbsp beef base
1 pint heavy cream
1 Tbsp Dijon mustard
1 tsp roux (corn starch & water)
12 oz tenderloin of beef tips/chunks
1 lb egg pappardelle
Instructions:
•In a sauté pan, melt 1/4 cup of unsalted butter. Add two cloves of garlic and cook until golden brown. Add two shallots and cook until translucent. Add one cup of sherry and let it reduce. Add three cups of cremini mushrooms and sauté until tender. Add one tablespoon of beef base and a cup of water. Add one pint of heavy cream and one tablespoon of Dijon mustard and reduce. Then add one tablespoon of the cornstarch and water mixture.
•Sear beef tips in a pan and finish in the oven to desired temperature.
•Bring water to a boil and add in egg noodles. Cook until tender and combine into sauce.
•Top the noodles with the beef and serve.
