When Shannon Thompson moved to the Capital Region two years ago, she was struck by the lack of seafood markets.
A native of Maryland’s Eastern Shore, she was accustomed to an abundance of choices for buying the fresh seafood the area is known for. “Where I’m from, almost every block has a fish shop,” Shannon says. “I was missing some of my seafood. I’m a big blue crab fan. Obviously, I love crab cakes.”
Last month, Shannon took a big step toward filling the area’s fish market void. She and her daughter, Tyler Hannon, opened their own fish shop, Oyster & Fin, in Clifton Park, bringing their beloved Maryland culinary traditions to an Upstate market.
