Recipe: BBQ Chicken Egg Rolls

Queensbury’s Streaking Moose BBQ wraps up the perfect cold-weather snack.

BBQ Chicken Egg Rolls
Makes 25 egg rolls

1 package egg roll wrappers (Nasoya available at most grocery stores)
1/2 red onion, diced
8 oz cream cheese
2 cups cheddar cheese
2 cups BBQ Sauce
4 cups diced smoked chicken, or cooked chicken if smoking not an option

• Start by dicing red onion and gathering remaining ingredients

• Combine diced onion, cream cheese, cheddar cheese, BBQ sauce and chicken in a large mixing bowl until fully incorporated

• Pre-roll mixture into roughly three-inch logs and set aside

• Take individual egg roll wrapper and rub a small amount of water along the edges, leaving the center dry

• Place pre-rolled mixture in center of egg roll wrapper and carefully roll over, folding in the sides around the half way point, ensuring there are no holes or loose parts of the egg roll

• Refrigerate and then fry at 375 degrees for 2-3 minutes until golden brown

• Enjoy with your favorite BBQ sauce for dipping (Streaking Moose’s Butt Lovin’ BBQ recommended)

Perfect Pair
Pair your egg rolls with a pint of Northway Brewing’s Pale Bearer Hazy IPA. Better yet, stop by the Queensbury Brewery (on your way home from the mountain, maybe), where Streaking Moose’s food truck will be posted up all winter long.
