Ingredients:
3 lbs yams
½ tbsp nutmeg
1 tsp cinnamon
1 cup sugar
5 tbsp vanilla
2 sticks butter (unsalted or margarine, at room temperature)
Directions:
•Clean each yam and peel completely.Rinse after peeling and then chop into cubes or 1/2-inch-thick slices. Pour into a deep 8×8” baking dish, and pour vanilla, nutmeg, cinnamon, sugar and one stick of butter on top of yams. Using your hands, mix together thoroughly so that the seasonings are spread evenly throughout.
•Bake covered with foil at 375 degrees for 90 minutes or until all yams are tender. Upon removal from the oven, immediately add remaining stick of butter to yams. Mix in butter by using the “folding-over” technique so as not to break up or smash the yams. Serve and enjoy!
